I bake when I'm anxious, stressed, in a crappy mood, in a good mood, or just in a baking mood. I enjoy baking, but I try to reign that shit in because I tend to eat all of whatever I baked and that's counterproductive to my fitness and healthy lifestyle journey.
I think my favorite part about this recipe is that there are no special directions. None of that "mix these things in a small bowl. Set them aside. Mix these things in another bowl. Set them aside. Add this and this, let them settle, then mix in this and this and this.." etc. Nope! Just dump it all in a bowl, mash it and mix it until your heart's content, pour it in a bread pan and bake it for an hour.
The original recipe called for 3 bananas, but I rarely have 3. My bananas come in even numbers, and if they go bad, it's usually only the last 2. So I just bake with whatever I've got left. No reason to throw away bananas simply because they're over-ripe. Mash those babies up and bake them into super yummy bread!!
